Built in old school traditional winemaking with new school flavors. This wine is BIG and deserves time to rest. Typicid to the varietal without the classic green notes of bell pepper. Maraschino cherry, wild sage, and cocoa are the most impressionable notes of aromatics. The flavors are concentrated and full of violet and vanilla with a touch of bramble berry or plum. Complimentary notes of white pepper and cigar box linger on the finish.

Wine Profile
Tasting Notes
Dark, big, rich, and destined for aging. Immediate notes of sugar plum, dark chocolate, and sweet almonds fill the notes. The aromas indicate sweetness similar to a port styled wine. Upon first sip, an entirely different set of flavors salivate the taste buds. Blueberry and blackberry are complimented by the full body and mouthfeel that Petite Sirah offers. A soft note of pepper touches the dry, velvety finish .
Vineyard Notes
Harvested at 28 brixs from Joe Irick’s vineyard. These vines are Goblet styled and cropped low to less than 2 tons per acre.
Production Notes
Fermented hot and fully destemmed grapes. Aged in neutral French oak to compliment the fruity characteristic of the varietal. Minimal intervention.
Winemaker Notes
This wine should ideally be cellared for 4 years before consumption. Peak aging should be around 8-10 years.
